Mixed trim fat (the fat trimmed off various cuts during butchering): 45 to 50 percent yield. Lower yield because of the higher connective tissue and meat scrap content, more beefy flavor in the finished product.
These are the averages I have hit consistently across maybe 30 rendering sessions. Your numbers will vary by maybe 5 percent in either direction based on temperature, time, and how aggressively you strain.

A 16 oz jar of finished tallow is the standard small format. A 32 oz jar is the next step up. If you want to end up with about 32 oz of finished tallow, you need 3 to 3.5 pounds of suet, 3.5 to 4 pounds of back fat, or 4 to 4.5 pounds of mixed trim.
What Affects Yield Within Each Category
The yield ranges above are averages. Three factors push your actual yield up or down within the range.
Temperature during rendering: low and slow (200 to 225 degrees Fahrenheit) extracts more fat from cellular structure and pushes yield toward the high end of the range. Higher heat (250 degrees and up) cooks faster but leaves more fat trapped in browned cracklings and pushes yield toward the low end.
Cut size: smaller dice (half-inch cubes or smaller) exposes more surface area and yields more tallow per pound. Large chunks (2 inch or bigger) leave fat trapped in the center and reduce yield by 5 to 10 percent.
Straining method: cheesecloth alone leaves some emulsified fat in the cracklings. A double strain (cheesecloth first, then a fine mesh sieve, then a coffee filter for premium clarity) extracts another 2 to 4 percent. For skincare-grade tallow the extra strain is worth it. For cooking, the basic cheesecloth pass is fine.
Initial quality of the fat: butcher fat usually arrives clean, but trim from a whole-animal share can include meat scrap, sinew, and connective tissue that does not render. If you start with mixed trim, expect the low end of the trim yield range.
How to Get the Highest Yield from Your Input
A few protocol notes that move my yield consistently to the high end of each range.
Cut the fat into half-inch cubes or smaller before rendering. If you can, freeze the fat for an hour first to make it easier to dice cleanly.
Render at 200 to 225 degrees Fahrenheit. Use a slow cooker on low, an oven at 200 degrees, or a stockpot on the lowest stove setting. The goal is liquefying the fat without browning the cracklings.
Stir every 30 minutes during the first two hours. After that, stir hourly. Stirring breaks up clumps and exposes new surface area.
Render for 4 to 6 hours total for suet, 3 to 4 hours for back fat, 2 to 3 hours for trim. Stop when the cracklings have shrunk and are floating in clear liquid fat without browning further.
Strain while hot. Hot fat flows easier through cheesecloth and leaves less behind in the cracklings.
Do a second pour. After the first strain cools slightly (still warm enough to be liquid), pour again through a fine mesh sieve or coffee filter to clarify.
The Cost-Per-Ounce Math
Here is where rendering your own tallow either makes financial sense or does not.
Buying raw suet from a butcher: prices vary by region. In most US cities, beef suet costs $2 to $4 per pound. Some butchers give it away or sell it for $1 per pound if you ask, especially if you have a relationship. Mixed trim is cheaper, sometimes free.
Rendered tallow yield: from $3 per pound suet at 62 percent yield, you get about 9.9 oz of finished tallow for $3, which works out to roughly $0.30 per ounce. From free suet, your cost is effectively $0.
Buying pre-rendered tallow online: a 32 oz jar from a reputable brand runs $25 to $35, which is $0.78 to $1.10 per ounce. Traverse Bay Farms 32 oz is on the lower end of that range. For most home cooks, my recommendation is to buy pre-rendered tallow once or twice to learn what good tallow looks and smells like, then render your own if you have access to a butcher who sells suet cheaply. If your butcher does not sell suet or wants premium prices, pre-rendered is the smart choice.
Yield Math for Specific Projects
Different projects need different amounts of finished tallow. Here are the targets I plan around.
Daily cooking use: about 16 oz per month for a household that cooks with tallow for high-heat frying, eggs, and roasted vegetables. Plan on rendering 2 to 3 pounds of suet per month, or buying a 32 oz jar every six weeks.
Skincare DIY (small batches): 8 oz of tallow makes 4 to 6 small balm jars. One pound of suet is enough for a small skincare project. Many readers buy a Traverse Bay 32 oz jar instead of rendering because the deodorized commercial product is easier to work with for face products.

Loss Sources: Where the Other 35 to 50 Percent Goes
If 1 pound of suet yields 10 oz of tallow, where do the other 6 oz go? It helps to understand this if you are trying to push your yield higher.
Water: raw fat is roughly 10 to 15 percent water by weight. That water evaporates during rendering, which is most of the visible steam you see in the first hour.
Cracklings: the dehydrated connective tissue and protein matter that does not render into fat. Cracklings are 10 to 15 percent of the original weight after rendering. They are edible (salt them and they are excellent) and you should not consider them waste even though they reduce your tallow yield.
Trapped fat in cracklings: even well-rendered cracklings carry some fat with them. The double strain method recovers some of this, but a few percent stays in the cracklings no matter how aggressively you strain.
Evaporative loss: very small, maybe 1 to 2 percent, as some volatile compounds boil off during the long render.
Sticking to equipment: 1 to 2 percent stays on the pot walls, the cheesecloth, and the strainer. Mostly recoverable with a scrape but not worth the effort for most batches.
The arithmetic for a 1 pound input: 1 lb (16 oz) raw → minus 2 oz water → minus 2 oz crackling solids → minus 1 oz trapped fat in cracklings → minus 0.5 oz equipment loss = 10.5 oz finished tallow. That matches the 62 to 65 percent yield I see on a typical suet render.
Storage Yield Math
Rendered tallow does not lose much weight in storage, but planning your storage capacity by yield is worth thinking about.
A 32 oz mason jar holds 28 to 30 oz of tallow with a little headroom. A pint jar (16 oz) holds about 14 oz. A quart jar (32 oz) holds 28 to 30 oz.
For a 5 pound suet render at 62 percent yield (about 50 oz finished tallow), plan on either two quart jars or three pint jars. I prefer pint jars because once a jar is opened you should use it within about 6 months for cooking grade, and smaller jars get used faster.
Stored cool and dark, sealed pint jars of well-rendered tallow last 9 to 12 months. Refrigerated, they last 18 months easily. Frozen, they last 2 to 3 years.
Frequently Asked Questions
Why did my batch yield less than 60 percent?
Three likely causes: the fat was trimmed with too much sinew or meat (lower yield, more crackling), the heat was too high (more crackling, less liquid fat), or the dice was too large (incomplete extraction). Try a slower render at lower temperature with smaller dice next time.
Why did my batch yield more than 65 percent?
Either you started with very clean leaf or kidney suet (which is mostly pure fat with little connective tissue), or your scale is off. Yields above 70 percent are unusual outside of premium kidney fat.
Does grass-fed suet yield differently than grain-fed?
Slightly. Grass-fed cattle carry leaner overall and the suet structure is sometimes slightly different, but the yield difference is within the 5 percent margin of normal variation. Not enough to plan around.
Is the back fat or kidney suet worth the price difference?
For skincare and high-end cooking, kidney suet is worth it because the rendered tallow is cleaner, milder, and has a longer shelf life. For everyday cooking and soap making, back fat or trim is fine and costs less.
How do I calculate yield for a custom render?
Weigh your raw fat input. Multiply by 0.62 for suet, 0.52 for back fat, or 0.47 for trim. That gives you finished tallow weight in the same units as your input. Convert to ounces if you started in pounds (multiply by 16).
Can I render frozen suet?
Yes. Defrost partially in the fridge first so you can dice it. Frozen suet renders the same way once cut. Just expect an extra 30 minutes of render time as the cubes thaw and start releasing fat.
