I have been writing about beef tallow for years, and the same ten objections come up every single week in my inbox. Most of them are repeats of nutrition advice from the 1980s, a couple are repeats of skincare warnings from beauty magazines, and a few are just internet rumors that nobody has ever bothered to fact check.
I want to take all ten of them in one place and put a real answer on each. I have linked the studies and the source material where I have it. If you have heard one of these from a friend or a doctor and walked away unsure, this is the post I want you to send them. None of this is medical advice, but it is at least honest about what the research actually says.

Myth 1: Beef Tallow Clogs Arteries
This is the big one, and it is the reason tallow disappeared from American kitchens for forty years. The short version of the story is that the 1980s nutrition guidance treated all saturated fat as a cause of heart disease, and tallow got swept out alongside butter, lard, and coconut oil.
The longer version is that the evidence behind that guidance has not held up. The 2020 JACC state-of-the-art review by Astrup, Magkos, Bier, and colleagues, titled “Saturated Fats and Health: A Reassessment and Proposal for Food-Based Recommendations,” looked at the entire body of randomized trials and meta-analyses on saturated fat. Their conclusion, which I am paraphrasing only slightly, was that the link between saturated fat intake and cardiovascular events is weak when controlled for the specific foods that deliver the fat. Whole-food dairy, meat, and traditionally rendered fats did not show the harm that mid-century guidance predicted.
The PURE study, published in The Lancet in 2017, followed 135,000 people across 18 countries and found that higher saturated fat intake was associated with lower stroke risk and no increased risk of cardiovascular death. That is not a small study.
This does not mean you can eat unlimited fat with no consequences. Calories matter. Total dietary pattern matters. But the specific claim that beef tallow clogs arteries because it is saturated has not survived the modern evidence.
Myth 2: Beef Tallow Causes Acne
This one has some nuance. Tallow contains oleic acid, palmitic acid, and stearic acid in proportions that overlap with human sebum. For most skin types, that overlap is exactly why tallow works as a moisturizer and why it does not feel greasy after it absorbs.
For people with strongly acne-prone skin, especially fungal acne (Malassezia folliculitis), oleic acid can feed the skin yeast and trigger breakouts. This is real. It is also specific. The estimated prevalence of acne-prone skin types that react to oleic acid sits in the single digits.
If you have never had cystic acne, tallow is unlikely to cause it. If you currently have fungal acne or active cystic acne, do a patch test on your jawline for a week before you commit. Try a minimal-ingredient option like Terra Lotus Unscented if you want the lowest-irritation starting point.
Myth 3: You Cannot Use Tallow on Your Face
You can, and the people who say you cannot are usually quoting a beauty editor who has never tried it. Whipped tallow balms are a category that has exploded in the last three years specifically because so many people figured out that traditional cosmetic-grade beef tallow works as a face moisturizer.
The science is straightforward. Human sebum is roughly 25 percent triglycerides and 16 percent fatty acids, with a fatty acid profile dominated by oleic and palmitic acid. Beef tallow is roughly 40 percent oleic and 26 percent palmitic. The match is not perfect but it is the closest match in any natural fat I have looked at, including jojoba, which is technically a wax.
For day use I rotate the Amallow whipped balm and the Amallow Clean Cloud. For nighttime when my skin needs more, I use the Vanman’s heavy formula. All three sit on my face fine. None of them caused breakouts. None of them clogged pores in any way I can measure.
Myth 4: Beef Tallow Is the Same as Lard
It is not, and the difference matters. Tallow is rendered ruminant fat (beef or mutton). Lard is rendered pork fat. The fatty acid profiles, smoke points, hardness, and flavor are different.
Tallow is harder, more saturated, has a higher smoke point (around 400 to 420 degrees Fahrenheit), and tastes mildly beefy. Lard is softer, less saturated, has a smoke point around 370 to 400 degrees, and tastes neutral when rendered from leaf fat.

Myth 5: Tallow Needs to Be Refrigerated
It does not, at least not on a normal kitchen timeline. Fully rendered tallow, sealed in a clean jar, kept out of direct sunlight, will stay good at room temperature for six months easily. I have a jar on my counter right now that is four months old and tastes exactly the same as the day I rendered it.
The reasons are simple. Tallow is roughly 50 to 55 percent saturated fat, which is naturally oxidation-resistant. There is almost no water content in a properly rendered batch (water content is what spoils butter at room temperature). And the antioxidants present in beef fat from grass-fed sources, including vitamin E and beta-carotene, add a little extra protection.
If you live in a hot climate without air conditioning, refrigerate it. If you keep your kitchen at 68 to 72 degrees, you do not need to. I keep larger reserves in the fridge and a working jar on the counter.
Myth 6: Tallow Smells Like Meat When You Cook With It
It can, if the render is bad. A fully rendered, properly strained tallow has a clean, mild beef aroma that fades fast in cooking. Most people who try it for the first time are surprised at how little it smells.
The smell comes from leftover protein bits and incomplete water removal in the rendering process. If your tallow smells strong, you either bought a low-grade product, you skipped the straining step, or you cooked off the protein at too high a temperature.
I use a grass-fed 4-pound bucket for cooking and it has the mild, slightly sweet smell I want in a frying fat. The deodorized Traverse Bay 32 oz has even less aroma if you are sensitive to it or you want to use the fat in skincare.
For a sear or a deep fry, you will smell the food more than the fat. For a pie crust application, neutral lard is still the better choice.
Myth 7: Tallow Is Unethical
This one depends on sourcing, like everything in animal agriculture. Tallow is a byproduct of the beef industry. When a steer is processed for meat, the fat is rendered or sold as a coproduct. If the fat does not go to food use, it goes to industrial use (biodiesel, soap manufacturing, pet food). The cow has already been raised and processed regardless of what you do with the fat.
From a nose-to-tail perspective, using tallow is the opposite of wasteful. It honors the animal by using a part that would otherwise be downgraded or industrialized.
If your concern is the underlying beef industry, that is a different conversation, and the right place to direct it is at the meat market upstream of the rendering step. If you are buying beef anyway, choosing pasture-raised, grass-fed, and locally processed sources is the lever that actually changes anything. Grass-fed tallow is a small premium that supports the entire pasture-raised supply chain.
Myth 8: Tallow Is a Processed Food
I see this on social media constantly, and it is one of the more frustrating misunderstandings. Rendering is the opposite of processing in the industrial-food-system sense. You melt fat at low temperature, strain out the solid particles, and let it solidify. That is the entire process.
There are no solvents, no high-pressure deodorization, no chemical bleaching, no hydrogenation. Compare that to the production of canola oil, which involves hexane extraction, sodium hydroxide refining, bleaching clay treatment, deodorization at 480 degrees Fahrenheit, and sometimes hydrogenation. Then ask which one is “processed.”
The dictionary definition of processing covers any deliberate alteration. The colloquial use of “processed food” in modern nutrition discussion means industrially refined, multi-ingredient, and often chemically modified. Rendered tallow is none of those things.
Myth 9: Tallow Is High-FODMAP
Tallow is pure fat. It contains zero carbohydrates, zero fiber, and effectively zero protein. FODMAPs are short-chain fermentable carbohydrates. By definition, a pure fat cannot contain FODMAPs.
If you are on a low-FODMAP diet for irritable bowel syndrome, tallow is one of the safest cooking fats you can use. Monash University, which maintains the gold-standard FODMAP database, lists beef fat as suitable for the elimination phase.
The confusion sometimes comes from people who react to fatty meals in general, which is a separate gallbladder or bile acid issue, not FODMAP. If you have had your gallbladder removed or you have known fat malabsorption, you may need to keep portion sizes modest. The food itself is not the FODMAP problem.
Myth 10: Tallow Causes Weight Gain
Tallow is calorie dense. So is every fat. Olive oil, butter, coconut oil, and avocado oil all sit at roughly 120 calories per tablespoon. Tallow is in the same neighborhood at around 115 calories per tablespoon.
There is no metabolic mechanism by which tallow uniquely promotes weight gain compared to other fats. The 2018 DIETFITS trial out of Stanford, which compared low-fat versus low-carb diets in 609 adults over a year, found no significant difference in weight loss between the two arms when both groups ate whole foods. Total calories and food quality matter. Specific fat sources, within reason, do not.
If you swap seed oils for tallow without changing portion size, you will not gain weight. If you start frying every meal in three tablespoons of tallow when you used to use one teaspoon of olive oil, your total calories will go up, and so might your weight. That math applies to every fat equally.
Frequently Asked Questions
Is beef tallow actually healthier than seed oils?
In the sense that it is more stable to heat, less oxidative, and historically eaten by humans for thousands of years without measurable harm, yes. The “healthier than seed oils” claim is well supported by the heat-stability research and the negative findings on heart disease causation. The “tallow heals everything” claim is not. Use it as a stable cooking fat and a skincare base. Do not expect it to cure conditions.
Can children eat beef tallow?
Yes, and it is a traditional childhood food. Tallow is what your great-grandparents fried French fries in for their kids. Use the same portion-size logic you would with any fat.
Does tallow raise cholesterol?
It can raise both LDL and HDL in some people, with the LDL rise often being in the larger, less atherogenic particles. The clinical significance of that pattern is still debated. If you have a personal or family history of cardiovascular disease, talk to your doctor and consider getting a fasting lipid panel with particle-size analysis (NMR LipoProfile or similar) so you have real data on your specific response.
Is grass-fed tallow worth the extra money?
For skincare and for primary cooking fat, yes. The conjugated linoleic acid content is higher, the omega-3 to omega-6 ratio is better, and the color and aroma are cleaner. A 4-pound grass-fed bucket runs around $30 and lasts months. For occasional cooking, conventional tallow is fine.
