US Wellness Meats is a multi-generation family farm based in Monticello, Missouri, in the northeast corner of the state. The operation started in 2000 with a herd of grass-finished cattle and a direct-to-consumer mail order business that was unusual at the time. They have spent 25 years building out the herd, the processing infrastructure, and the supply chain to ship beef, organs, and rendered fats nationally.
The tallow is rendered on-site from the cattle that come through their own processing. That is the part of the story that matters. The scent is the part that surprises people. Open the jar and it smells like a clean roast, not like a butcher shop. Mild. The flavor finish is more present than a deodorized tallow, which I happen to like on a fry but some people will not.
Roasting vegetables. A tablespoon of tallow tossed with quartered Brussels sprouts at 425F for 25 minutes. Better caramelization than olive oil, no smoking, no off-flavors. Standard tallow performance.
Eggs. Tried scrambling eggs in US Wellness tallow over a few mornings. The flavor of the fat is just barely present in the finished eggs. I prefer butter for eggs but this works.
Popcorn. Half a stick of melted US Wellness in a stovetop pot of popcorn finished with sea salt. The flavor is rich and slightly beefy. I would use a wagyu tallow for popcorn if budget allowed because the milder profile shows through better, but US Wellness is good. The cooking verdict is that US Wellness is a top-tier general purpose tallow. It performs every job I have asked of it without complaint.
Skincare Use
US Wellness is marketed as a dual-purpose product, both edible and topical. I tested it as a face balm and as a body moisturizer over six weeks.
As a face balm. Applied a pea-sized amount to clean dry face after evening shower. Spread easily once warmed between fingers. Absorbed in about three minutes. Left the skin feeling soft and slightly more supple than my normal night routine. The mild scent does linger for the first 15 to 20 minutes on the face. Did not break me out (I am not acne-prone) but it is a heavier balm than a whipped product and I would not put it under makeup in the morning.
As a body balm. This is where US Wellness really earned its place. On legs and elbows after a hot shower it absorbed within five minutes and left no greasy residue. Better than coconut oil, better than any lotion I have tried, and noticeably better than I expected from a 14 oz jar that lives in my pantry.
As a hand cream after dish washing. Excellent. A pea-sized amount works in immediately and lasts through two more hand washes.
